This recipe for kid-friendly peanut butter keto fat bombs make staying on keto easy, they provide a break from the diet and taste amazing. To get started, line a muffin pan with wax paper and set it aside. Mix the peanut butter, stevia, peanut flour, and vanilla in a medium-sized mixing bowl.
Peanuts are a healthy fat source that every kid enjoys, make sure you use organic, sugar-free peanut butter. Many store-bought varieties of peanut butter contain sugar and stabilizers that you want to avoid. Mix everything until you achieve an even consistency and then set the bowl aside. (1)
To make the chocolate layer, take a small saucepan and place it over low heat. Melt 10-ounces of dark chocolate with 5-tablespoons of coconut oil. Dark chocolate is an excellent source of polyphenol antioxidants that clear the body of free radicals, while the coconut oil gives the recipe a further boost of long-chain fatty acids that are essential for human health. When the chocolates melted and mixed with the coconut oil, pour it into the bottom of the muffin cups with around 2-tablespoons of the chocolate and place it in the freezer for a few minutes to set. For the chocolate layer:
10 oz sugar-free dark chocolate, chopped
5 tbsp coconut oil
For the peanut butter filling:
4 tbsp natural peanut butter
2 tsp coconut oil
1 tbsp granulated Stevia or other low carb granulated sweetener to taste
2 tsp peanut flour
¼ tsp vanilla extract
How to Make the Best Peanut Butter and Chocolate Fat Bombs
1. Line a muffin pan with paper liners. Set aside.
2. To make the peanut butter filling, combine all the ingredients in a bowl. Set aside.
3. To make the chocolate layer, place the chocolate and coconut oil in heatproof bowl.
4. Sit over a pan of barely simmering water and allow the chocolate to melt, stirring occasionally.
5. Fill the bottom of the parchment cups evenly with 2 teaspoons of melted chocolate.
6. Freeze for 5 minutes.
7. Add a teaspoon of peanut butter mixture into each cup.
8. Pour the remaining melted chocolate into the cups, over the peanut butter layer.
9. Freeze until set.
10. Store the fat bombs in an airtight container in the refrigerator.
